Ingredients -

    • Large cooked prawns (peeled and deveined withtails intact) – 18
    • Extra Virgin Olive Oil – 1 tbsp
    • Peeled lychees – 24
    • Fried onion – ¼ cup
    • Coriander leaves – A handful
    • Mint leaves – 10
    • Roasted peanuts (roughly chopped) – 100g
    • Bird’s eye chillies (seeded and thinly sliced) – 2

    Ingredients for dressing:

    • Rice vinegar/white wine sugar – 60 ml
    • Grated palm sugar (brown sugar) – 2 tbsp
    • Small clove garlic (finely chopped) – 1
    • Chilli flakes – A pinch
    • On1Y Fruit Seasoning – 1 tbsp 
    • Lime juice – 1 lemon
    • Fish sauce (optional) – 2 tsp

Procedure -

    • To make dressing, combine rice vinegar and  palm sugar in a small saucepan on high heat. Bring to boil. Add garlic and chilli flakes and remove from heat. When cool, stir in lime juice and fish sauce. Season to taste.
    • On a large platter, combine prawns, lychees and herbs. Pour olive oil and dressing. Scatter roasted peanuts, chillies and fried onion. Serve.
