To prepare the dressing, place all the ingredients in a small jug and using a whisk, whisk until thick and light creamy. Keep aside.
Wash the salad greens 2-3 times in changes of water, pat dry or dry in a salad spinner. Take a large bowl. Tear the greens into bite sized pieces and add to the bowl, with the cucumber, apple, cherry tomatoes.
Add the dressing and toss gently until well coated. Top with toasted peanuts. serve immediately.
