Heat a large soup pot over medium heat with olive oil. When hot add the onions, carrots, celery, garlic, and ginger. Now add chicken pieces and Cook for 8-10 minutes until fragrant and veggies are beginning to soften.
Stir in the tomato puree, soup seasoning and cook for 2-3 minutes while continuously stirring. Add the chicken stock and sugar. Cover and simmer for 15 minutes until chicken is cooked through.
