INGREDIENTS

olive oil 1 tbsp
chicken breast, cut into 1 inch cubes 350 gms
onion, small cubes ½ cup
carrots, small cubes ½ cup
celery, small cubes ½ cup
garlic cloves 3
fresh tomato puree, seedless and skinned 1 cup
fresh ginger, grated 2 tbsp
ON1y Soup Seasoning 1 tbsp
chicken stock 3 cups
sugar 1 tsp
Garnish 1
Green onion, chopped 1

METHOD

  1. Heat a large soup pot over medium heat with olive oil. When hot add the onions, carrots, celery, garlic, and ginger. Now add chicken pieces and Cook for 8-10 minutes until fragrant and veggies are beginning to soften.
  2. Stir in the tomato puree, soup seasoning and cook for 2-3 minutes while continuously stirring. Add the chicken stock and sugar. Cover and simmer for 15 minutes until chicken is cooked through.
  3. Serve immediately.
